Everyday Brownies

The only diet rule I have in my house is eat whatever you want but you have to make it yourself.  Also not a rule but I don't deep fry anything.   Example: I want a cheeseburger and fries I start with ground beef and potatoes.  This works simply because there is no instant gratification.  You have to really want it.  Plus the way I cook everything is healthier than store bought with no weird ingredients.  My only exception, ice cream, it's my rule so I can decide when it needs to be broken.
Tonight I wanted brownies, this is my go to recipe.  
I started with the recipe on the back of my store brand cocoa powder can and made a few changes.  Enough to call this recipe mine.


Everyday Brownies
As in I could eat these everyday

1/4 butter
1/4 cup canola oil
1/2 cup baking cocoa
1 cup sugar
1/2 tsp salt
1 TBSP instant coffee
2 eggs
3/4 cups flour
1/4 tsp baking soda
1 tsp vanilla
1/2 cup semi sweet chocolate chips

preheat oven to 350˚
In a medium sauce pan melt butter.
Stir in canola oil, baking cocoa, sugar, salt and instant coffee.
Beat in eggs.
Add flour, baking soda, and vanilla.  Stir till mixed.
Pour into a greased 8X8 pan.
Sprinkle chocolate chips over top.
Bake 20 minutes or in till cooked through.

I use the butter to stabilize the brownie but the oil makes it chewy.  The coffee brings out the chocolate flavor.

The husband is out of town so the entire pan is mine.  Might be a problem.

  1. I like your rules. I've been trying to cook from scratch a little bit more lately. I baked a spaghetti squash on Sunday and have been making my own little personal pizzas, that are like a trillion times healthier than frozen pizza.

  2. I try to keep to the same rule, but with less people in my house the entire pan is always mine.
